Life surely has its moments of dread, the What-Ifs and “Do I Really Have To’s”… This year's Chardonnay’s fermentation delivered both! Choosing an aggressive/bold yeast, much like the character Mrs. Robinson in the movie The Graduate, kept me on my toes.
Daily trepidation came with not truly knowing who or what was in-charge… Well that’s part of the fun, exploring different types of yeasts or no added yeast at all… Who’s the boss, Mrs. Robinson?
At the end, a wedding bouquet is not thrown haphazardly into the air, however it strokes the surface of this varietal with unexpected notes of lemon and melon, balanced between dry and sweet.
Let’s toast to the misunderstood Mrs. Robinsons, without first names.
